I have learned a new cooking trick when mixing my crepe batter. I was looking for my crepe recipe a few months ago and when I couldn't find it; I jumped online to see if I could find a simple one to use. What I have found, was a suggestion to refrigerate the batter for at least 1 hour after you mix. WOW :) The difference is outstanding. No more lumps, no more sticking to the pan, and everything cooks evenly.
